Appetizers: Cheese Puffs

1 recipe of Cream Puff Paste
1 c. shredded sharp cheese
1 Tbsp. Chopped fresh herbs (parsley, rosemary, thyme, oregano, etc.)
1 egg plus 1 Tsp. of water (for egg wash)

Follow instructions for preparation of Puff Paste. When removed from the heat stir in the cup of cheese and your choice of herb. Pipe onto a parchment lined baking sheet using a 1-inch round tip. Or, drop on lined sheet pan a full teaspoon of batter. Brush with egg wash. Bake in a 400 F
oven until golden brown. Serve warm. Makes 3 dozen cheese puffs.
